Given the almost four-hour drive, my plan was to make a weekend out of hiking Camel's Hump and Mount Mansfield. I was only half successful due to a very tiny Saturday, but I was able to summit Camel's Hump on Friday. It was an incredible hike, and the trail was pretty easy to follow (though at some point, the blazers on the trees pretty much disappeared, which would have been disconcerting except that the rock oath was pretty easy to follow. Of course, the day I chose was super humid, but thankfully you're under cover of trees the majority of the time. The top was super windy as advertisied, but the views were unbelievable and made all the work to get there more than worthwhile.
For anyone looking to stay somewhere to do these further-away hikes, I was more than happy with the Stowehof in Stowe. Its closer to Mansfield; hence my plan to do Camel's Hump first (so that I'd be closer to home base the more tired I got).
